Spinach is one of those vegetables that you either love or hate. It is loaded with health benefits for those who like it. Spinach contains oxalic acid that gives some people problems with their tongue.
Cooking with spinach
Spinach is either eaten raw or cooked. When cooked a big pot full of raw spinach collapses to a couple hands full, due to its high water content. Once the spinach is cooked you can season it and eat it or pure it.
In Switzerland a common dish that you can even get at a restaurant is pureed spinach with a couple of sunny side up eggs on top. I have never heard about or seen this dish in Canada.
